Where’s the meat? While Lionfish Modern Coastal Cuisine is famous for seafood and sushi, that’s not all we have to offer. For those of you who prefer to eat “by land” on occasion, we have an incredible menu of meat entrées to tempt your taste buds and satisfy your appetite (and possibly your very soul).

Here, we’ll offer a primer on the meat entrées of Lionfish, complete with tasting notes and drink pairing suggestions. Get ready to work up a serious appetite!

THE MEAT ENTRÉES OF LIONFISH MODERN COASTAL CUISINE

From chicken to pork to beef and even duck, there’s something for everyone on our well curated menu of meat entrées.

HALF-ROASTED MARY’S CHICKEN

This is comfort food at its finest. Our chicken is served with

black trumpet mushroom sauce, which has a rich, earthy flavor unlike any other you’ve tasted before. Talk about umami! It’s also served with salsify, which is a parsnip-like root, as well as garlic and swiss chard, a flavorful leafy green with just the right amount of bitterness to balance out the rich umami flavors in the dish.

Suggested drink pairing: When choosing a wine, consider picking Pinot Noir. It’s known to play well with earthy and umami flavors, which are in plentitude in this dish owing to the chard, salsify, and mushroom sauce. Pinot is known as a wine that pairs well with a variety of flavors, so it will also work extremely well with the chicken as well!

GLAZED SALMON CREEK PORK CHOP

Our unctuous bone-in pork chop is the stuff of foodie dreams and memories. It’s served with stone fruit: think pork chops with applesauce, all grown up and sophisticated. It’s also served with baby broccoli, and crazy delicious smoked cheddar grits. To balance out that stone fruit, a peach mostarda, which is a unique Italian condiment made using fruit and mustard essence, is used to finish.

Suggested drink pairing: A white is just about right in this case. Sauvignon Blanc is a perfect pairing for this elegant entrée. The crisp, bright acidity “cuts” through the rich flavor of the meat, yet pairs nicely with the fruit notes from the mostarda and stone fruit accompaniment.

MAPLE LEAF DUCK BREAST

Duck breast is always a decadent dinner treat, since so few people cook duck at home on the regular. But trust us: Chef JoJo’s version of duck breast is out of this world. It’s served with quince purée, duck confit stuffed cabbage, barley, and (wait for it) duck sauce. It can’t be missed!   

Suggested drink pairing: You could go either white or red with this dish! For a white wine pick, consider Gewürztraminer. Not only is the name fun to say, but it makes for an intriguing pairing, as this light and bright white will pick up the quince and duck sauce flavors.

A red wine such as Pinot Noir will also pair pleasingly with this duck dish, working to add brightness to the rich meat and complementing the cabbage and barley nicely.

8 OZ. CENTER CUT FILET

If you love the beefy flavor and incredibly tender texture of filet, this is the pick for you. It’s served simply, with blistered tomatoes, demi glacé (a rich reduction sauce made with wine, which simply brings the flavor of the meat sing), and arugula.

Suggested drink pairing: Red meat loves red wine. Choose something with soft tannins for this lean and tender meat. Merlot, Chianti, or an aged Cabernet will all make elegant pairings with this classic dish.

20 OZ. PRIME NATURAL NEW YORK STRIP

Where’s the beef? If that’s your mentality, then this is the dish for you. 20 ounces of prime New York Strip are grilled to perfection, and served with

Bordelaise (a red wine and onion sauce), sunchokes Lyonnaise, and miso-sunchoke puree.

Suggested drink pairing: While some enjoy a bold red wine with steak, in this case, consider something more subtle. A Bordeaux is a delicious pick with this entrée. The flavor doesn’t overwhelm the meat or the sauce, but works in harmony with both.
