UNI – FROM SAN DIEGO/SANTA BARBARA

Uni maintains a bit of a mystery around it for those who have never enjoyed this delicacy. Uni, pronounced oo-nee, is the edible part of the sea urchin. Sea urchins are rather rare to begin with, so when you have the opportunity to try uni, it’s one you don’t want to pass up. 

Uni has a creamy consistency, which makes it different from other types of sushi. The texture also plays a role in why it’s considered an acquired taste by some. The flavor of uni is mild, lightly sweet and a tad briny. Uni that comes from the San Diego/Santa Barbara is currently considered some of the best in the world, with much of global consumption of sea urchin being sourced from this region. 

ALBACORE – FROM HAWAII

When many people think of Albacore, sushi isn’t always the first thing that comes to mind. It hasn’t been until more recent years that more sushi restaurants have begun featuring this delicate fish on their sushi menu, and for this reason alone, Albacore is a type of sushi that many haven’t tried. 

The color and consistency of Albacore flesh is a little lighter, more delicate than other types of tuna. The flavor is also milder, and less “fishy”. This makes Albacore a great choice for someone who is just beginning their journey into the world of sushi, and for those who are looking for something a little lighter to balance out heavier selections.
